i'm sitting here enjoying my morning...watching the early show, loading up my photos & doing my notes for ali's this week project...a nice morning, except for being totally frustrated w/ the politicians right now...they seem to be more concerned w/ scoring points in the polls & attacking each other than working on a solution to the economic sitiuation we are in right now...UGH! total B.S. in my opinion...get to work people!!!! i mean come on! hop in that freakin' mercedes benz & your designer suit & get.the.job.done! we've all heard WAY TOO MUCH TALK....now get to work & find a solution... isn't that what you promised us during all of your campaign speeches??
ok...now back to my nice morning...lol
the kids are still sleeping...we've got a day off from school today...tater is sick so we'll be having a real chill day with lots of spongebob (most likely lots of "ryan will you PLEASE settle down!"...i'm going to need to figure out some fun things for the non-sick little guy to keep him occupied :)
i made some butternut squash risotto last night & really looking forward to having some leftovers for lunch :)
totally enjoying cooking right now...the farmers' market is chock full of gorgeous veggies & i'm really enjoying trying out some new recipes & pulling out some oldies but goodies...recently i've been reading a lot about what my diet should include for heath & cancer prevention so i'm trying to include some more substance in our meals (i.e. calcium, fiber, important vitiamins)...cooking light always has some really great informative articles with really good recipes if you are interested for yourself :)
edited to add...just browsing through cooking light this morning & found this garden minestrone recipe...making it this week for sure!!
& speaking of recipes...here is that slow cooker chilli recipe :)
Roasted Pepper & Bean Chilli
4 roasted red peppers (you can roast your own, i just use jarred :)
1 onion, chopped
1 zucchini, quartered & sliced
2 cloves garlic
2 Tablespoons chilli powder
1 teaspoon dried oregano (i used a sprig or 2 of fresh b/c i had it in the garden)
1/2 teaspoon cumin
1 28 oz. can crushed tomatoes
1 15 oz. can diced tomatoes (i use 2 cups fresh instead if i've got them on hand)
1 15 oz can garbanzo beans, drained
1 15 oz can black beans, drained
1 15 oz can pinto beans, drained (i use cannelli or white beans b/c we prefer those :)
Combine everything in the slow cooker & cook on low for 8 hours or high for 4 hours...
serve w/ fresh bread & enjoy :)
